Your daily vegan-friendly recipe – Veggie Quesadillas
Do you know how may daily servings of fruit and vegetables are recommended?
Nine! Nine servings a day! For some that are hard to imagine. It’s pretty easy to squeeze in a banana or an apple for a snack, and maybe a salad for lunch or with dinner…but what about the other 6 servings? And why is it so important???
Phytonutrients, that’s why. Plants contain over 100,000 phytonutrients, and different plants and vegetables have different phytonutrients. That’s why it’s important to eat a variety of fruits and vegetables. And the reason to consume so many? Well, it can protect against developing health problems such as heart disease, Alzheimer’s, COPD, and cancer.
The antioxidants in plants also slow down aging and boost your immune system.
So, how do you make sure you get your 9 servings? Salads are great (I love to eat a big salad loaded with veggies for lunch), but they can get boring.
A Veggie Quesadilla is a great way to add more servings of vegetables to your diet! It’s easy to make, and you can use whatever vegetables you have on hand.
Most of the time we use hummus inside our Veggie Quesadillas. This makes it all gooey, kind of like cheese (but without the dairy and animal fat!)
If we have any Roasted Red Pepper Cashew Cream in the fridge, we’ll use that! It’s a tasty, special treat.
All we have to do is pile up our rainbow of phytonutrient-loaded veggies and pop it into the panini press!
Mmmmm…crunchy on the outside, gooey and warm in the middle.
A perfect way to get more servings of vegetables!
