Confetti Vegetable Rice Salad is the quick and easy answer to a summertime salad that tastes similar to potato salad, just as satisfying, but with less work. Yep, you get to give the Easy Button a push–NO PEELING OF POTATOES, using rice instead! Moms will appreciate this one, as it is brimming with different veggies, and you won’t have to nag your kiddos to eat it.
I’ve taken it to many Potlucks, and everyone likes it and asks what is in it. We all have fun as they try to figure out what is in it, (obviously rice, assorted vegetables, and mayonnaise, but they usually don’t guess the “secret” ingredient until I tell them.
Now, have you ever known someone that you asked for a recipe, but they refused to give it to you? You shower them with compliments on the delicious dish they brought to the gathering, and kindly ask for the recipe. They give all kinds of excuses–or just say “No!” to your request for their out-of-this-world-yummy-dish. Well this happened to me, but I finally got the recipe!
I asked for this recipe once a year at our annual teacher picnic, held at the end of the school year, hosted by the principals and vice principals, for all the teachers, school counselors and staff. You see, I’m not a naggy person, but when I really want something, I do persist–gently.Well, finally came the day when she said “Yes”, but it was a conditional “Yes” as I would find out.
She was working on a term paper for her Master’s Degree, and was having difficulty with it. She knew I already had my Master’s Degree and had had to write many papers plus a thesis, so she knew I was experienced. Her offer was that she would give me the recipe if I would help her with it. I carefully considered her offer, and said I would, if it only involved helping and/or guiding, not doing the whole thing for her. I had my set of principles, and didn’t want to risk anything inappropriate. She had no problem with that, and had not expected more. So we had a deal. And I finally had this recipe.
When making this, you will see a nifty, simple shortcut where you cook the rice and the mixed vegetables together in the same pot at the same time–that is an Easy Button you can push! Another one, is if you use your food processor to pulse the celery, bell pepper, and onion. Push that Easy Button again friend!
Oh, the “secret” ingredient I mentioned is the sweet pickle relish.
Since they don’t all taste alike, be sure to find a brand you really like, as this is a good flavor in the background of this dish. When you taste this, you will notice that it reminds you of the flavors of Potato Salad–but you didn’t have to peel and boil and cut up any potatoes, now did you! You just poured the rice into the pot, added some water (and the mixed veggies), and cooked it all. Don’t you just love pushing that Easy Button! 1 cup rice (:converted” works best )
2 cups water
1-10 to 16 oz. package mixed frozen vegetables
3 ribs celery, rough chopped, (1 cup celery)
½ bell pepper, rough chopped (1/2 cup)
