Burger with an Asian twist – you need to try our own Thai Peanut Veggie Burgers
One of the challenges of having non-vegan kids is planning meals. Luckily, they like burgers; so do we! Theirs are made of beef or turkey…and we’ve got veggies, oats, and chickpeas in ours!
I love Thai flavors, especially peanuts and peanut butter. But, unfortunately, peanuts are high in fat and calories. Last year I discovered a super-cool new product that I like to use in smoothies and recipes like this. It’s called PB2 Powdered Peanut Butter. I found it on Amazon, but I’ve seen it at Target and other grocery stores.
PB2 has 85% less fat (!) than traditional peanut butter. Two tablespoons have just 45 calories. It is all natural, preservative free, and contain no artificial sweeteners. The only ingredients are peanuts, salt, and sugar. It is pretty awesome stuff!!!
So, getting back to burgers…
This Thai veggie burger is bursting with flavors. It has great texture, and it’s fairly easy to make. It makes 6-8 burgers, which freeze well for busy nights.
We like to top with lettuce, tomato, and avocado…which seems weird to add avocado to Thai food–but, trust me–it’s good!!

How to make Thai Peanut Veggie Burgers
3/4 cups rolled oats (not instant oats)
1 15 oz. can chickpeas (rinsed and drained)
1 large sweet potato
1/4 cup basil, fresh and chopped
1/4 cup cilantro, chopped
4 garlic cloves, minced
3 teaspoons fresh ginger, grated
1/2 cups peanuts, chopped
2 tablespoons ground flax seeds
1/2 tablespoon sesame seed oil
1 tablespoon soy sauce
1 teaspoon lime juice
1 teaspoon salt
1/2 teaspoon black pepper
10 tablespoons PB2 Powdered peanut butter
5 tablespoons water + 2 more tablespoons
2 tablespoons lime juice
2 tablespoons soy sauce
1/2 tablespoon agave nectar
1 teaspoons fresh ginger, grated
1/4 teaspoon red chili flakes
