This is perfect and complete and delicious and marvelous & I don’t know… I have no words!
It’s the perfect Sugar Free, Gluten Free & Diary Free Chocolate Cake!
For the instance the perfect Birthday Cake that I made for my Mamy’s birthday!
Let’s start from the beginning. I was looking for something really delicious, that everyone could enjoy without guilt or feeling sick. At the table there were people with all kinds of diets, diseases and beliefs.
Oh God, said like this it seems that it was a hospital party… it wasn’t! it was a nice countryside party full of very interesting people ?? (my mom is a “health guru” how I call her… I hope this will make you understand better).
Anyway, I was looking for the perfect cake that is delicious, doesn’t attack the intestines, is light for the stomach, does not promote cell deterioration and keeps us young forever.

I’ve did some research (like for the Vegan Cake Bars) and I’ve found a recipe that seemed perfect. You can see it here “Best Ever Gluten Free Chocolate Cake”, I just love her blog!
But as I have a serious disorder and I’m absolutely unable to make a recipe without changing it, at least a little bit, I made a personal version of it that is slightly different.
And here I am sharing this marvelous & precious recipe with you.
Imagine: everybody satisfied, from your vegetarian sister in law, to your obsessed gym brother, passing through your diabetic mother-in-law and your father with cholesterol problems.
Magic isn’t it?
But how? How this can even exist? What is the ingredient that makes the magic happens?
Well there are a few.
Spoiler Allert: grated carrots & mashed cauliflower. And you not even know that they are in there. Well…you won’t taste it, you’ll know because it is assumed that you’ll going to make it!

For the cake you will need finely grated raw carrots, eggs (oh yeah, but if you want you can substitute it with 1 & ½ bananas, mashed and whipped with a mixer for some minutes, I have tried this on another cake recipe and it worked well), agave syrup or whatever alternative sweetener you prefer, oil, baking powder, cocoa, millet flour, tapioca flour, brown rice flour.
In a bowl whisk until fluffy the eggs and syrup or bananas and syrup. Add oil and grated carrots and whisk with a fork.
Sift in the bowl all the dry ingredients, little by little and mix until well combine.
Divide the batter in 3 parts. I got 800 gr of batter, so I divided in 3 parts, 266 gr each.
I lined with baking paper a 17 cm diameter round baking tin and preheated the oven to 180°C (350°F). I put 1 part of the batter in the tin and cooked for about 20-25 min( toothpick test).
After cooking all the layers I let them cool completely on a rack.
I did that the day before.
Now the Vegan Buttercream.
I have another version of Vegan Buttercream here. Go and see it and decide which one you like it most. I can assure you that this one is perfect with this cake.
You will need cauliflower, pear, avocado, coconut oil, syrup and cocoa.
Pay extra attention on the ingredients temperature. It is very important that they have the same temperature and mostly if the coconut oil was on the fridge and is a butter you need all the ingredients cold from the fridge. If the coconut oil is liquid you need your other ingredients to be warm. This will prevent your buttercream from looking like you over-beaten your butter, I don’t know if you know what I mean ?!?!
Anyway, steam the cauliflower then put it in a blender and blend until smooth. Then take one ingredient at a time and add it to the mix. Blend until very smooth. Done!
Store it in the fridge for a couple of hours.

How to make a Sugar Free Chocolate Cake
260 gr finely grated raw carrots
2 cups steamed cauliflower
For the cake:
3 eggs or 1 and ½ bananas
½ cup agave syrup or whatever sweetener you prefer
½ cup seeds oil
2 tsp baking powder
A pinch of salt
1 cup cacao
3 tbsp millet flour
3 tbsp tapioca flour
6-8 tbsp brown rice flour
For the Vegan Buttercream:
1 big very mature pear
½ cup coconut oil
¼ cup agave syrup
½ cup cacao
