This noodle recipe is just amazing – Sticky Beef chili Noodles.
Too many London based foodies, workers, and general street food enthusiasts Mark Gevaux or ‘the rib man’ as he is so often known by is no stranger. He dwells in the back streets of brick lane serving up slow-braised pork ribs to passers-by and wanting no great credit for what he does the rib man is synonymous with the ever-growing London street food scene. So what is all the fuss about? I thought, and Living in Leicester I couldn’t just pop down the road to try his ribs, so I ordered a bottle of his chili sauce – aptly named ‘Holy fuck’. It arrived in the post today, so I set about reviewing this infamous sauce.
With some trepidation, I opened the bottle and was immediately hit with the smell of chili and tomato, from the smell I knew it was going to be hot. I dipped my little finger and tasted, soon realizing this is some seriously hot sauce (it’s called holy fuck for a reason). It has much more than just heat through, in between the hot naga chili is a deep robust almost chewy tomato flavor with BBQ notes and a sweetness that reminds me of Worcester sauce, perfect for grilled meats, lamb, burgers and of course pork ribs.
Price wise a 250ml bottle will set you back £5 plus P+P, a tad expensive some might think, but this is an artisan product that’s been made by Mark and not some steel ladened factory run by managers sacrificing quality in the name of profit margin. I could quite easily see this sauce making it to the supermarket shelves, but quite honestly I don’t want it too. I would even go as far as to say this needs the equivalent of an appellation d’origine contrôlée.
This is a delicious robust sauce, full of heavy rich tomato flavor, hot naga chili and a smokey sweetness. I can see how Marks fans are addicted to this sauce as it will take a stronger willed person than me to resist its spicy charm.

How do you make Sticky beef chilli noodles
2 garlic cloves
4-6 savoy cabbage leaves
Small hand full cashew nuts chopped
1 dessertspoon holy fuck chili sauce
Juice of half a lime
1 dessertspoon Cornflour
2 dessert spoons sesame oil
2 dessert spoons light soy sauce
1 dessertspoon honey
3 Spring onions
Salt and pepper
Medium egg noodles to serve
A wedge of lime to serve
About 300g sirloin or rump steak, fat removed and thinly sliced in to strips
