A Korean inspired recipe for spicy chicken kebabs using gochujang, which is a hot spicy chili paste used all over Korea, particularly in their delicious fried chicken.
Since a plucky cave dweller decided to rub some sticks together a good many years ago, man has been cooking meat over flame ever since. The carnal allure of flinging hunks of flesh over fire always seems to get you salivating, the thought, however, is normally more romantic than the reality. I have been to many barbeques in my time and most have either centered around the beer and company, with the food serving as an ancillary for talking to your neighbor over the fence about your new lawnmower. Barbeques in Britain are a lot of the time, crap. If it wasn’t for the saving grace of alcohol and good company you would most likely be crying into yet another burnt hotdog and trying desperately to palm off your sorry-looking hockey puck burger to the dog. Having a good few barbecue recipes up your sleeve is always a good idea to help alleviate this problem.
A good few months ago you might remember my Korean fried chicken recipe which was a hot, spicy and crispy mouth party in itself; but the thing that really set the recipe apart from most other fried chicken recipes was the gochujang or ‘korean chili paste’ to the uninitiated. I said then that it was such a versatile thing and could easily be used in a myriad of other dishes, and this folk is one of them. The beauty of this recipe is you can add more or less chili paste to suit how spicy you like it. I, being a chili-headed masochist like mine fairly hot, but not so hot you run around the garden flapping your hands and shouting ‘water! water!’. If the thought of attempting to cook using an ancient – and difficult – cooking technique hasn’t put you off, I can at least ensure you now have one more decent, tasty and easy spicy chicken kebab recipe in your repertoire.

How do you make spicy chicken kebabs
300g boneless and skinless chicken thighs
1 ½ dessert spoons of gochujang chili paste
Juice of 2 limes and zest of 1
3 dessert spoons dark soy sauce
2 tsp soft brown sugar
2 tsp rice wine vinegar
Stalks from the coriander to make the dip
Thumb sized piece of fresh ginger
1 large garlic clove or 2 smaller ones
500g plain yogurt
Juice of 1 lemon or lime
Pinch of salt
1 tsp sugar
Twist or 2 of black pepper
