Instructions

  1. Roast Garlic: Preheat oven to 400°F (204°C). Trim garlic heads, remove loose outer leaves, drizzle with olive oil, and wrap completely in aluminum foil. Roast for 45 minutes until soft and caramelized.
  2. Prepare Potatoes: Peel and quarter potatoes, ensuring uniform size. Place in a large pot, cover with cold water by 1-2 inches. Bring to a rolling boil over high heat and cook 15-20 minutes until fork-tender.
  3. Mash and Season: Drain potatoes, return to pot. Squeeze roasted garlic cloves from their skin and mash. Combine potatoes with roasted garlic, heavy cream, Parmesan cheese, butter, and salt. Gently stir over low-medium heat for 5 minutes.
  4. Finish and Serve: Sprinkle fresh thyme leaves and freshly ground black pepper over the potatoes. Taste and adjust seasoning as needed. Transfer to serving dish and enjoy while hot.
