Scale
Main Ingredients:
- 2 pounds red potatoes, washed and cut into quarters
- 1 head garlic
- 6 tablespoons (85 grams) butter
- ¾ cup (177 milliliters) half and half
Seasoning:
- Kosher salt
- Fresh ground pepper
Cooking Oil:
- 1 teaspoon (5 milliliters) olive oil
Instructions
- Prepare a whole garlic head by slicing approximately 0.25 inches (6 millimeters) off the top, exposing the individual cloves.
- Drizzle extra virgin olive oil over the exposed garlic head and completely encase it in aluminum foil, creating a sealed packet.
- Roast the foil-wrapped garlic in a preheated oven at 375 degrees Fahrenheit (190 degrees Celsius) for approximately 55-65 minutes until the cloves become golden brown and extremely soft.
- Select medium-sized potatoes and rinse thoroughly under cool water to remove any dirt or debris.
- Place potatoes in a large Dutch oven or stockpot, covering completely with cold water and adding of kosher salt.
- Bring the water to a rolling boil, then reduce heat and simmer for 14-16 minutes until potatoes can be easily pierced with a fork.
- Drain potatoes using a colander, then return them to the warm pot.
- Squeeze the roasted garlic cloves directly into the pot with the cooked potatoes.
- Gently heat half-and-half cream and unsalted butter in a separate saucepan until butter melts completely.
- Pour the warm cream and butter mixture over the potatoes and roasted garlic.
- Season with kosher salt and freshly ground black pepper to taste.
- Mash the mixture using a potato masher, maintaining a rustic texture with some small potato chunks.
- Transfer to a serving dish, garnish with finely chopped fresh chives or parsley, and add an extra pat of butter on top.
Notes
- Roast garlic ahead of time to develop deep, rich flavor that transforms ordinary mashed potatoes into a gourmet side dish.
- Use cold water when boiling potatoes to ensure even cooking and prevent breaking down of starch molecules.
- Gently warm dairy ingredients before adding to potatoes to maintain smooth, creamy texture without cooling down the dish.
- Mash potatoes with a light touch to keep some texture and prevent them from becoming gluey or pasty.
- Fresh herbs like chives or parsley add bright, fresh flavor and beautiful green color to the finished dish.
- Save leftover roasted garlic for spreading on bread or mixing into other recipes for extra depth of flavor.
