Instructions

  1. Prepare a whole garlic head by slicing approximately 0.25 inches (6 millimeters) off the top, exposing the individual cloves.
  2. Drizzle extra virgin olive oil over the exposed garlic head and completely encase it in aluminum foil, creating a sealed packet.
  3. Roast the foil-wrapped garlic in a preheated oven at 375 degrees Fahrenheit (190 degrees Celsius) for approximately 55-65 minutes until the cloves become golden brown and extremely soft.
  4. Select medium-sized potatoes and rinse thoroughly under cool water to remove any dirt or debris.
  5. Place potatoes in a large Dutch oven or stockpot, covering completely with cold water and adding of kosher salt.
  6. Bring the water to a rolling boil, then reduce heat and simmer for 14-16 minutes until potatoes can be easily pierced with a fork.
  7. Drain potatoes using a colander, then return them to the warm pot.
  8. Squeeze the roasted garlic cloves directly into the pot with the cooked potatoes.
  9. Gently heat half-and-half cream and unsalted butter in a separate saucepan until butter melts completely.
  10. Pour the warm cream and butter mixture over the potatoes and roasted garlic.
  11. Season with kosher salt and freshly ground black pepper to taste.
  12. Mash the mixture using a potato masher, maintaining a rustic texture with some small potato chunks.
  13. Transfer to a serving dish, garnish with finely chopped fresh chives or parsley, and add an extra pat of butter on top.
