Ingredients
Scale
- 1.5 lbs (680 g) chicken breast, thinly sliced
- 8 oz (226 g) spaghetti
- 8 oz (226 g) burrata cheese
- 3 cloves garlic, minced
- 4 cloves garlic, minced
- 2 tsps smoked paprika
- 1 tsp Italian seasoning
- 4 tbsps (60 ml) butter
- 2 tbsps (30 ml) olive oil
- 2 tbsps (30 ml) olive oil
- 10 oz (283 g) cherry tomatoes or grape tomatoes, halved
- ½ cup (120 ml) fresh basil, chopped
- ⅓ cup (45 g) pine nuts, lightly toasted
- ½ lemon (preferably, Meyer lemon), thinly sliced
- ¼ tsp salt
- Salt and pepper to taste
Instructions
- Roast Tomatoes: Preheat oven to 400°F. Toss cherry tomatoes with olive oil, garlic, salt, and pepper. Spread on parchment-lined baking sheet and roast for 20 minutes until blistered and caramelized.
- Prepare Chicken: Season chicken breasts with salt, smoked paprika, and Italian herbs. Sear in hot skillet over medium-high heat for 5-6 minutes per side until internal temperature reaches 165°F. Slice into thin strips.
- Create Sauce Base: In same skillet, melt butter and sauté lemon slices and garlic until aromatic.
- Cook Pasta: Boil spaghetti in salted water until al dente. Drain, reserving some pasta water.
- Combine Dish: Toss pasta with lemon-garlic butter, adding reserved pasta water to create silky sauce. Arrange on plates and layer with roasted tomatoes and sliced chicken.
- Finish and Serve: Garnish with torn burrata, fresh basil leaves, and toasted pine nuts. Serve immediately while warm.
Notes
- Maximize Tomato Flavor: Roasting concentrates sweetness and creates caramelized edges, transforming simple cherry tomatoes into intense flavor bombs.
- Chicken Cooking Precision: Use meat thermometer to ensure 165°F for perfectly juicy, safe chicken without drying out the meat.
- Pasta Water Magic: Reserved starchy liquid helps create silky sauce and helps ingredients cling better to spaghetti strands.
- Burrata Serving Tip: Add cheese just before serving to maintain creamy texture and prevent premature melting.
