Description

Creamy Chicken Alfredo Soup delivers Italian-inspired comfort in a hearty bowl. Rich parmesan, tender chicken, and silky noodles blend perfectly for a satisfying meal you’ll crave on chilly evenings.

Ingredients

Scale

Protein:

  • 12 ounces (340 grams) skinless, boneless chicken thighs, cut into small pieces

Vegetables:

  • 1 cup (150 grams) chopped carrots
  • 1 cup (150 grams) chopped celery
  • ½ cup (75 grams) chopped onion

Other Ingredients:

  • 2 tablespoons (30 milliliters) vegetable or canola oil, divided
  • 2 cups (480 milliliters) chicken broth
  • 1 cup (240 grams) cooked broken spaghetti
  • 1 (15-ounce/425 grams) jar Alfredo sauce
  • 1 (1.4-ounce/40 grams) envelope vegetable soup mix
  • ½ teaspoon dried basil

Instructions

  1. Heat of oil in a large saucepan over medium-high heat. Sear chicken pieces until they are completely cooked through and no longer pink in the center, approximately 5-7 minutes.
  2. Transfer the fully cooked chicken onto a separate plate, keeping the meat warm.
  3. Pour an additional of oil into the same saucepan. Add diced carrots, chopped celery, and sliced onions. Sauté the vegetables for 4-5 minutes until they become softened and slightly translucent.
  4. Return the cooked chicken pieces back to the saucepan with the sautéed vegetables.
  5. Pour in chicken broth, prepared Alfredo sauce, soup mix, and dried basil. Stir all ingredients thoroughly to combine.
  6. Bring the mixture to a rolling boil, then immediately reduce the heat to low. Cover the saucepan and allow the soup to simmer gently for 15 minutes, allowing flavors to meld together.
  7. Incorporate the pre-cooked pasta into the soup, stirring gently to distribute evenly. Heat the soup for an additional 2-3 minutes until the pasta is warmed through.
  8. Ladle the hot chicken Alfredo soup into serving bowls and serve immediately while piping hot.
