I want to have a Tea Party, and I am inviting you to come! This will have fresh raspberries and blueberries as the stars in my delicious chicken salad! We all love raspberries, men and women alike, so not only is this a popular choice for anyone any time, it is an especially wonderful choice for a Tea Party Salad. And this is the time of year to eat or use raspberries while they are fresh, which is only mid-summer through early Fall. Otherwise you can use frozen, but fresh is best.
Although berries are usually in fruit salads, I thought they would look and taste spectacular combined in a chicken salad on a pretty bed of lettuce. Doesn’t that just sound like an entrée salad for a Tea Party, and one that you would love to put your fork into and get a yummy bite? Great Gorgeous Girlfriend Food!
Blueberries are never a problem, but I searched the internet to find information on raspberries for they can be a little tricky to use before going fuzzy. The method used by Cook’s Illustrated seemed to show the best results from all the other methods, based on comments from different reviewers, so that is the one I used. It proved to be very successful, so I happily share it with you.
You simply give the berries a quick dip in a vinegar and water solution (I’d use a 50/50 solution) to kill the mold spores and bacteria that cause the “fuzzies”. Then gently rinse. Line a salad spinner with paper towels and spin the raspberries dry. Easy!
I also worked on a raspberry salad dressing that combines perfectly. This is one that is so yummy that I can hardly wait to share it with my Tea Party girl friends! I think you will like it too.
I have only had one Tea Party. I had a very dear friend whose daughter-in-law was getting married, and I wanted to do something special for her. So when I posed the question to my friend about what kind of Bridal Shower she would like for me to have–she asked me if I could do a Bridal Shower Tea.
Shaking in my Texas boots, I said, “Sure!” Little did she know that I knew next-to-nothing about Tea Parties, let alone Bridal Tea Parties, but I wanted to learn.
Well, that launched me like a NASA rocket into researching. I wanted to have as Lovely a one as I could for her, and I learned a lot about Tea Parties—typical salads and sandwiches. The good news is it turned out all right. Luckily, I had a very good friend who knew all about teas—different kinds (like white, green, black teas), and their different heat requirements.
Yes, it is a little complicated! Fortunately, I only had to worry about the food.
So back to this incredibly yummy Raspberry and Blueberry Chicken Salad, which I did not serve then because I had not thought about it. If I had, it would have been a First Choice! I really like chicken salad, but was not prepared for how good this is!
Maybe it’s because we eat with our eyes but I want you to know that the raspberry flavor, in the fruit as well as the salad dressing, comes through and makes it a standout. Great Gorgeous Girlfriend Food!
