Oo yum-yum – the delectable Pesto Crostini with Sun-Dried Tomatoes
On our first date, Mark and I had a Gilmore Girls marathon. (I knew right away he was a keeper!) In the 3+ years since that first date, TV show marathons have become a household tradition. We’ll watch a show from the very beginning and make our way through the series. Because our tastes change (and because we own so many DVDs), we have a tendency to start a marathon without finishing the previous one. As a result, we’re currently in the middle of Gilmore Girls, Friends, The West Wing, Will & Grace, and The Office. Lately, we’ve been watching a lot of Will & Grace. Even though we’ve seen each episode multiple times, we still laugh at all of the funny moments, like Jack on coffee.
In one episode, Will cooks dinner for his dad:
Whenever my dad goes to a restaurant he always says the same thing. ‘God, I can make a meal just from the appetizers.’ So that’s what I’m making him: a meal of appetizers.
This weekend, I decided to follow Will’s advice and make a meal out of appetizers—specifically, pesto crostini.
Now that basil is in season, I have been making pesto non-stop. Before I was vegan, I made it with parmesan; now, I substitute nutritional yeast. Personally, I think the new version tastes even better! I love pesto because it’s so versatile. These apps would also be great with roasted tomatoes, fresh tomatoes, or roasted red peppers. Served with crisp, golden bread slices and sun-dried tomatoes, they are finger-licking good.
Since the tagline of my blog is “Vegan food so good you want to marry it,” I asked Mark if he would marry this crostini. Neither of us remembers what he said because we were so busy stuffing our faces.
Days later, we’re still talking about how delicious it was. Maybe making a meal out of appetizers will become a new household tradition.

How to make Pesto Crostini with Sun-Dried Tomatoes
olive oil spray
3 cups basil, washed
3 cloves garlic
¾ cup parsley, washed
½ cup pine nuts, toasted
¾ cup nutritional yeast
pinch of salt
¼ cup extra virgin olive oil
heaping ¾ cup sun-dried tomatoes, drained from oil
1 baguette, sliced
