After the glutton-fest of Christmas, I think it’s fair to assume most of us are groaning under our belt stretching waistlines, contemplating running to work and feeling like we should probably eat something good for us.
Healthy doesn’t have to mean boring, nor does it have to mean complicated. As a cook I often cook with what I have to hand, I don’t have the luxury of phoning up a supplier to deliver fresh ingredients to my door so being spontaneous is both exciting and necessary. What is key for me is getting the best out of what ingredients I do have.
I intended to make this dish using smoked haddock, but the only haddock I could find was the horrible dyed over salty kind, so I opted for a lovely fillet of Scottish salmon instead, and a better dish it was too.
After making this I had visions of a rather smug looking swaggering salmon walking past a fake-tanned haddock on a beach and kicking sand in its luminous additive ridden face.

How do you make Pan Fried Salmon
700g new potatoes (I used Allians variety)
120g frozen peas
1 whole lemon, juiced and zested
2 cloves of garlic crushed
Black and white pepper
2 dessert spoons fresh chives plus extra for garnish
Fresh parsley leaves for garnish
Olive oil or rapeseed
4 salmon fillets (skin on)
