If you’re a fan of big, fluffy pancakes, then you’ll absolutely adore this Lemon Skillet Pancake.
I think the best way to describe it is a pancake/cake hybrid, because it looks a lot like a cake, but tastes like a pancake, and it is oh so delicious.
Also, as an added bonus, since it all bakes together in one skillet, you don’t have to stand in front of a hot stove, flipping away (yay!).
Putting it together is just as simple as regular pancakes, here’s how you do it…
First, get your oven preheating, then place a skillet (around 11 in.) over medium heat and add a tablespoon of butter.
Add the dry ingredients (flour, baking powder, baking soda, and salt) to a mixing bowl, then in another bowl or large measuring cup combine milk, eggs, melted butter that has cooled slightly, sugar, vanilla, lemon juice, and lemon zest.
Next, mix the wet ingredients using a fork or small whisk, pour the mixture into the bowl with your dry ingredients, and whisk it all together.
After that, swirl the butter that should now be melted (but not brown) around the skillet so that the bottom and sides are coated. Then pour all of the batter into the hot skillet.
Once you’ve poured everything into the skillet, it’s going to look like a lot of batter, but don’t worry, it doesn’t rise much.
Now, just put the skillet in the preheated oven for 20-25 min. until it’s cooked through and golden. It only took 20 min. to cook in my oven, but everyone’s oven is a little different, so I would check it at the 20 min. mark and go from there.
Once the pancake is done, let it cool for 5 min. before transferring it to a large plate for cutting and serving. I recommend garnishing it with powdered sugar, some extra lemon, and your favorite syrup.
This recipe would also be great with some fresh blueberries or raspberries baked in. You would just want to sprinkle about a cup over the batter before it goes into the oven.
