I need to tell you that French fries may be my best friend. Maybe not the healthiest of food but sooo delicious. When potatoes grow up they strive to become a delicious french fry. This I believe may be the destiny of any humble potato growing up.
Let me tell you a french fry story.
Recently, T and I met up some friends for Indian food. We ordered lots and lots of dishes because that’s what you’re supposed to do when eating Indian food. I mean, how can you just pick one thing? One of the dishes was a small appetizer that was comprised of 4 different things. I remember none of them except for one. French fries.
There sat some unassuming fries, fries that looked no different than most fries. There were spices scattered lightly on the fries but I paid no attention to it. I picked up a fry, dipped it the accompanying green sauce (I just eat what’s in front of me and ask questions later….this is best, especially when traveling) and popped it in my mouth.
Guys. These fries were delicious and completely unexpected. I mean, I already love french fries but I LOVED these fries.
The beauty of these fries is their simplicity. They were lightly sprinkled with garam masala and served alongside a cilantro mint sauce. As I was eating the fries, I kept wondering how I had spent my life without them. It would have made me sad but I was so happy from the fries to begin with…seriously…I have major fry love.
I knew that I had to make these fries and dip stat.
And here they are….except, since I’m all about balance, I baked these fries instead. And since I baked these fries, they are healthy and then you dip them in this amazingly delicious cilantro mint sauce which is all herby and lovely and you pretty much are eating a french fry salad.
If you have no interest in eating a french fry salad, we can’t be friends.
A few notes about this recipe….garam masala is a mixture of spices used in Indian cooking. To make things easy, you can buy garam masala in the spice section of most grocery stores. However, if you’re feeling feisty (or if you’re too lazy to go to the store like I was and you happen to have a ton of spices at your disposal because you buy spices like the apocalypse is coming soon), you can make your own. Garam masala is typically a mixture of coriander, cardamom, black peppercorn, nutmeg, cloves, cinnamon, and cumin. I loosely followed this recipe minus the saffron and with some changes for taste. The technique below for baking fries is the one that works best for me to create crispy fries. If you have another way of baking fries that you’re happy with, or if you feel like a properly fried fry, by all means, do it. Finally…this sauce. This sauce is so delicious. The recipe calls for more sauce than you’ll need with the fries, but you’ll want more. Smear it on toast with an egg for breakfast in the morning or eat it straight out of the jar if you’re a badass like me.

How do you make Garam Masala Fries
1/3 cup mint, chopped
1 cup cilantro, chopped
1/3 cup onions, diced
1 teaspoon fresh ginger, chopped
1 jalapeno, seeds and stems removed, chopped
1 teaspoon cumin
Salt to taste
1/3 to 1/2 cup water
3 to 4 russet potatoes
Hot water (enough to soak the fries)
1/4 cup canola oil (or other neutral tasting oil)
2 teaspoons garam masala
salt and pepper to taste
