Something amazing today – Fennel sausage with prosciutto, onion and peppers.
I think being forced into creativity is a good thing, not only does it force you to stretch your culinary mind but it makes you appreciate and understand the ingredients you are working with, it makes you a better cook. A few weeks ago I was asked to participate in a competition set up by maille, the rules were very simple, use 2 of their products in a recipe you have designed and made yourself.
I was particularly stretched with this competition because of the ingredients I chose, I know I could have used each of them individually in a myriad of recipes, but I wanted to incorporate them both, together in gastronomic bliss. I mulled over what I wanted to do for weeks, I thought about pork rillettes with lightly pickled radish on Melba toasts, I thought about a salad of some sort, and – believe it or not – even though about making some sort of cake, thankfully I resisted the urge.
I decided to go for something that is more shall we say ‘me’, my blog is about the food I love to cook so going for something against what I love wasn’t going to work.
I created this recipe on the back of the traditional sausage plait, with my version having an Italian feel using fennel sausages and prosciutto, layered with sweet caramelized onions and roasted peppers, Delicious.

How do you make Fennel sausage with prosciutto onion and peppers
A 320g sheet of ready-made puff pastry
4 sage leaves finely chopped
1tsp Fresh thyme leaves
100g prosciutto (about 6-8 slices)
½ tsp fennel seeds
½ tsp yellow mustard seeds
2 dessert spoons maille sherry vinegar
Jar of Maille truffle mustard (you won’t use a whole jar so don’t panic)
Jar of roasted peppers (you will need about 8 pieces)
1 dessertspoon muscovado sugar
Salt and freshly ground black pepper
1 whole egg
1 egg yolk
Knob of butter
1 dessertspoon olive oil
