By now you all know about my need for cookies, well just one more won’t make a difference. Today we an old favorite – Chocolate Peanut Butter Stuffed Cookies.
Stuffed cookies have been a thing for a while now, and I totally get it. Why would you have an ordinary cookie when you can have a cookie with a tasty bonus nestled inside? There’s no contest, really.
That kind of thinking is what inspired me to create these Double Chocolate Peanut Butter Stuffed Cookies. They’re a little different than your run-of-the-mill stuffed cookie because they stay fairly tall instead of flattening out, which leaves you with a nice thick layer of peanut butter filling to bite into.
Here’s how to make these cuties…
Making the dough and peanut butter filling:
This recipe starts with an easy double chocolate cookie dough that can be made with a hand mixer or stand mixer. You just have to cream together your butter and sugars, beat in egg and vanilla, gradually mix in the dry ingredients, and fold in the chocolate chips. You’ll want to let the cookie dough chill in the fridge for at least an hour so it’s easier to work with later on.
While it chills, make the peanut butter filling by beating together creamy peanut butter and powdered sugar (the powdered sugar stabilizes the peanut butter so it doesn’t get runny and ooze out of the cookies as they bake). Once fully incorporated, the mixture will look and feel similar to cookie dough. Set it in the fridge to chill until you’re ready to make the cookies.
Forming and baking the cookies:
First, get your oven preheating and line 2 baking sheets with silicone baking mats or parchment paper. You’ll also want to have a couple Tablespoon size measuring spoons or cookie scoops handy.
Scoop out 2 Tablespoons of cookie dough and flatten it out in the palm of your hand. Then, scoop out a scant Tablespoon (not quite full) portion of the peanut butter mixture, and place it in the middle of the cookie dough.
Fold the edges of the cookie dough up over the peanut butter filling, and roll it into a smooth ball. Arrange the balls on the prepared baking sheets, leaving at least an inch between them, and press a few chocolate chips into the top of each dough ball.
Bake the cookies for about 15 minutes until the edges are set. When you take them out of the oven the tops should look dry but still feel quite soft (they firm up as the cookies cool). Let them sit for 5 minutes before transferring them to a wire rack.
Serve the cookies slightly warm or at room temperature (I vote warm with a glass of milk, personally). Any leftovers can be stored on the counter in an airtight container for up to 3 days.
