Going to attempt something with a bit of vooma – Chili Spaghetti with Garlic Recipe.
It’s been a while that I didn’t post anything on here, but is summer , is August… I don’t know… I was a little bit’ demotivated, I’m trying to improve my photo skill and seems like I’m stuck in the same spot…
But a nice guy from Nowthatisgood ( thanks Gabriel) connected with me and gave me an injection of enthusiasm .
So here I am sharing with you the most basic , super quick, super simple and extremely traditional, here in Italy, pasta recipe!!
Ta-da! “Spaghetti aglio, olio e peperoncino”
I think some of you might know it from college or not, but anyway you have to try it!
Ok let’s see some basics: This recipe is a dish of Neapolitan cuisine and is a “poor” revisitation of the Spaghetti con vongole (spaghetti with clams).
However is famous throughout Italy and is common use as a midnight snack when you are with friends (at least here in Rome we use to do this .
This recipe is so simple to make and so loved by all, that you can find it also in restaurants or taverns offering country genuine dishes.
Spaghetti with garlic, oil and hot peppers is a dish that fully satisfies the hunger and the desire for something good and is well suited to those who cooking is not their thing.
Spicy taste of chili, the richness of good extra virgin olive oil and finally the garlic aroma make this humble dish unique and exquisite.
Ok, it might seem that I am going to start singing a hymn in honor of this recipe, but I won’t ??
The fact is that there are an infinite number of variants for the preparation of this dish, And mainly you can use it as a base and do everything you want with it.
There are those who add cherry tomatoes, those who fry garlic and chili together, who puts parsley in the boiling water for the pasta and those who put it on top of the pasta, there are those who use breadcrumbs, Parmesan and those who even use pecorino cheese … Endless possibilities!
But this time I will introduce you to the infusion version, fragrant and very healthy, because we don’t need to fry!
To be precise we did it Sunday for lunch because we woke up late, we had stuffed ourselves with dinner on Saturday night, but we were however, still a bit ‘ hungry. Or maybe that was just a craving…
Little Note: The better and high quality the ingredients the better and awesome will be the final result!
To do this you will need a pot for boiling the spaghetti, a glass, 200 gr spaghetti ( we use the fresh ones made with eggs, we call them “Spaghetti alla chitarra”, but this recipe is delicious also with the classic ones especially if you don’t eat animal products ) a clove of garlic, one little chili or hot pepper or whatever type of chili you have, Parmesan or vegan alternative ( I once bought a similar cheese made with cashews, It wasn’t bad at all) about 4 tablespoons, breadcrumbs also about 4 tablespoons and of course extra virgin olive oil, again 4 tablespoons.
Now take that glass you have there, and crush the garlic without breaking it in pieces. Put the crushed garlic in the glass, take the chili and cut it in big chunks, put it in the glass and cover all with the olive oil. Set aside for at least one hour. I usually put it in the morning for lunch or in the afternoon for dinner. But one hour is enough for getting all the flavors!
When you are ready cook the spaghetti following the instruction on the box. Once they are cooked, throw away the garlic and the chili and the marvelous oil that you have now put it all over the pasta, mix then add the Parmesan and the breadcrumbs, mix again and Enjoy!
