I’m so excited! I have figured out a yummy and hearty main-dish use for my left-over rotisserie chicken before it gets too old. Think! Lets just call it Chicken Stuffed Acorn Squash Recipe!
Use it quick, before you are afraid it is beyond the all important “best if used by” date, and you have to throw it out. Does that happen to you too? I don’t like wasting food, but I won’t put myself at risk either. So now you can share in my excitement with this great winter dish.
I had been working on a project, when suddenly my internal dinner bell went off. Time to start throwing supper together! I started pondering what I would fix, and was asking myself what ingredients do I already have on hand that I could put with the rotisserie chicken. I asked my Mac if he had any inspiring ideas. Neither of us wanted to have to get in the car and go to the grocery store to pick up ingredients, or get fast-food. We both started looking.
And So—the saga of the development of a recipe begins. Personal pantries invaded, and behold—what is behind the closed door of the big hulk known as The Frig! The hunt is on! Secrets divulged. But an important question to be answered is–what combinations play well together? Am I writing one of your stories too?
We started looking through the kitchen pantry and frig, with our best creative Thinking Caps on. We spied the Acorn Squash, sitting quietly over by the kitchen counter, hoping we wouldn’t notice it, but we did, and grabbed it without a struggle.
We then had to decide what else would go well with squash stuffed with chicken, both being somewhat bland. Aha! I had some packaged (Pepperidge Farm) Stuffing left, which is a natural combination with chicken. Yes, the onion and celery sautéed in butter for the stuffing would raise the Yum Bar for sure.
But could we leave it at that? Just a traditional type stuffing? No, we wanted more flavors added. Should we go savory or sweet? Stuffed squash with oranges? Okay, but nope. Stuffed squash with apples? Yes, but it still needed to be more interesting.
So we brain-stormed of what would go with apples. Well, onions do and we already had that. More fruit—but what? Thinking that if the apples were sweet, then something tart would be interesting. Oh yes, dark red Craisins (dried cranberries) would be a great additional fruit that would give a bit of tartness!
But we still wanted another layer of flavor, not a fruit. Then Bacon! Bacon! Bacon! came to mind. Everything (nearly) is better with either butter or Bacon, and it is friends with both onions and apples, 2 ingredients we already were including.
But even though crisp bacon would give it some crunchy texture, we wanted something more. Rummaging around in the pantry, I found a partial package of pecans that should have been placed in a sealed container of some sort, and safely put away in the freezer so they wouldn’t get rancid!
Nuts need to be placed in a sealed container and put into the freezer so they won’t get rancid. Thaw to use.
Now, back to our saga. So I tasted the pecans to see if they had gone rancid and they hadn’t. Good. I’ll toast them, chop them a little, and they can go into the stuffing too. I thought we were ready for action, and then I spied the Pomegranate seeds, realizing they would also add a little note of tart, and also brilliant beautiful red color—especially if some were used for a garnish also!
So we were ready to stuff! I think it is “Company-Worthy”! Try it and tell us what you think.

How to make Chicken Stuffed Acorn Squash
1 large acorn squash, cut in half and seeded
4 slices bacon, fried and crumbled
4 Tbsp butter, divided
½ medium onion, diced
1 stalk celery, diced
½ apple, peeled, cored, diced
½ tsp. sage
½ tsp thyme
½ cup Crasins
¼ cup toasted pecans
1 to 1½ cups packaged stuffing
1 cup Rotisserie chicken, diced
½ cup Chicken broth
¼ cup Pomegranate seeds, reserving some for garnish
2 tbsp parsley, chopped
