Here comes one of the Super Heroes of Soup – The Hearty Chicken and Rice Soup
This Easy Chicken and Rice Comfort Soup is exactly what it says it is, plus it has veggies. This recipe is perfectly delicious for anyone, anytime—particularly if it is cold outside, and especially if you have a cold or the flu. So here is just what you or someone you know– needs. Right now most likely.
And Facebook to the rescue? Yep. I was looking at Facebook last week and saw the status of one of my Bible Study friends. Michelle told about how six in her family of eight had the flu, with two having bronchitis with it, which included herself—the wonderful mother of this large, mostly adopted, family!
I knew she needed whatever help I could give, and I knew that chicken soup would be “just the ticket”. I also knew that it couldn’t have noodles in it, and had to be made with rice instead.
Chicken Soup–anti-inflammatory and congestion relief
“So how does chicken soup help?” you ask. It is because it acts as an anti-inflammatory with the Power of Chicken Broth. A Mayo Clinic article says, “Chicken soup is really well known for relieving flu and cold symptoms. Bascily it works in two ways -Firstly its a really good anti inflammatory and it also help with congestion by basicly limiting the amount of time the virus has to be contact with lining of the nose. (all that from chicken broth)
Plus there was research done at the Univ. of Nebraska with the scientific article available on the university’s Chicken Soup Website, indicating measurable improvement in reducing upper respiratory cold symptoms.
Why Rice and not Noodles?
I really like Chicken and Noodle soup. So why is it very important to use rice in the soup, instead of noodles, when you are congested? This is because scientific information says that in addition to a few other foods, wheat causes nasal mucus to form, leading to more congestion.
Sometimes we learn things the hard way. When one of my daughters was young and having some congestion, I made it worse giving her a doughnut and a glass of milk. Mistake! Within a very short time, we had to rush her to the hospital because she was having great difficulty breathing.
Wheat by itself can contribute to that. However, congestion + the wheat in the doughnuts + the milk multiplied everything, and caused her worse difficulty in breathing. A respiratory treatment at the hospital cleared it up, and now knowing all that, I’ve avoided that bad combination since then. It was a scary time.
There are many internet articles on wheat and gluten sensitivity causing mucous problems. One that I saw was by Dr. William Davis, Cardiologist and author. He has research that shows “mucous flows where wheat goes”, and has written a book on how today’s wheat contributes problems to our health.
So now you know why, when I saw on Facebook that my friend and her family was sick, I took them homemade Chicken and Rice Soup—Not chicken and noodle soup. I also thought back to what my mom fixed for me when I was sick, as well as what I fixed for my kiddos, and decided that jello with fruit in it would probably be a welcome addition.

How to make Chicken and Rice Soup
3- 4 lbs. chicken
2 ribs celery
1 onion, cut in large chunks
1 cup rice
1 pound frozen mixed vegetables
2 quarts chicken broth
1 teaspoon dried thyme
Kosher Salt and Black Pepper, to taste
