I’ve been thinking and dreaming about this recipe called No-Cook Cake Batter Ice Cream for a loooong time. I even bought some Funfetti cake mix over a month ago, and it has been sitting in the pantry just begging me to take it on a foodventure. Why did I wait so long? I guess because sometimes I can be delusional about being healthy. The reality is that healthy comes in waves for me. That’s pretty horrible, right? But I have major dietary ups and downs, and I’m not quite ready to apologize for it. Not yet, anyway.
This will be the easiest cake batter ice cream you’ll ever make. 4 ingredients. Zero cook time. There are a lot of recipes for cake batter ice cream out there, but I’m a fan of the super simple way: no cooking of egg yolks, no thermometer, no huge investment of time. Just mix, fridge, freeze, eat. You can get a great creamy consistency without a bunch of work?? Done!
Just mix milk, heavy cream, vanilla extract, and cake mix together in a large bowl. Refrigerate it for 2-6 hours to let all the flavors come together. Churn in an ice cream maker for 12-15 minutes, then put the finished product in the freezer to harden a little more, or enjoy it at soft-serve consistency. Here’s why you can get away without cooking eggs: the pudding from the Funfetti (it’s in the mix!) will combine with the milk a bit and you’ll end up with something kind of a cross between ice cream and frozen pudding. It’s basically a cheating way to get a really creamy, custard-like ice cream. One quick note: be prepared for the Funfetti sprinkles to melt into the mixture… don’t be bummed. Just add rainbow sprinkles to the finished ice cream, or even while it’s churning! Problem solved 🙂
Honestly, when I got Adrien an ice cream maker for Christmas (admittedly a self-serving present… those are the best kind anyway), I was not expecting that we’d use it as often as we do. It’s so easy to get creative and it’s much less expensive to make ice cream at home than to buy the good stuff in the store.
