The bigger than life Recipe – Braised beef hotpot combined with Port!
I get quite fed up sometimes at the small minded people that often sneer and poke fun at dishes like this because of it’s simplicity, the ever knowing amongst us will always have the last word on comfort food with jeering and ‘I know how to do that, it’s easy’ glares of disapproval.
My response is always a resounding and forceful ‘shut up’. I don’t and never will consider myself as an expert cook because like many of the humble and modest cooks I consider myself a ‘just above novice’ type.
That’s not because I think I am rubbish, it’s because I am always learning, and just when I think I have cracked a recipe, technique or how to use an ingredient I get slapped in the face with the sudden realization that there is always something new to learn.
The stark truth of cooking is that not everyone can cook, but anyone can.
There are those that take the route of ready meals and pot noodles out of nervousness and unwillingness to experiment, then there are those that simply take no joy in being elbow deep in stress and anxiety, worrying a dish won’t turn out right or the fact they just can’t be bothered.
Yes, this dish is simple, but it takes knowledge and technique to make it simple, you can’t just bung things in a pot and hope for the best.
Remember those dinners your nanny used to make that you just can’t replicate no matter how much you try?
That’s all down to skill and ingredients, get those 2 things right and you too can tell the ‘know it all’s’ that your hotpot is better than there’s.

How to make Braised beef hotpot combined with port
100g shallots peeled then cut in half, nip off the root end.
350ml good beef stock
2 sprigs fresh thyme
4 carrots cut in to chunks
2 dessert spoons plain flour
800g potatoes peeled and cut in to thin slices
Salt and freshly ground black pepper
800g diced beef ( use stewing beef like chuck or shin or even braising steak cut up)
