Lovely Blueberry Crumb Bars – by far one of my favorite blueberry recipes(and I have a lot). I’m a couple weeks late, but the Vernal Equinox is upon us. Finally. I try my best not to “wait until Friday” or Summer or tomorrow. If you want something, the present is the best time to achieve it. Because it is all we have. I strive to embrace this, but I’m only human. I like the stillness that the winter months bring, but I feel I’m at my best when I’m productive.
And it is so hard to be productive in 10-degree weather. Everything is dull and I’m no longer inspired to do anything besides escaping into books and drinking an irrational amount of espresso.
Winter always gets the short end and I am trying to relish those days with so little sunlight, but it is an uphill battle. A battle that, for the time being, I no longer have to endure.
Spring is here and presents herself with warm budding flowers and iced coffee and longer days. There are few things I enjoy more than longer days. More to do, more to see, more to interact. I have always had a hard time balancing all there is to do, all that I want to do, so daylight’s saving is my savior.
There’s something about the death of Winter or rebirth of Spring that makes me feel more connected. I want to share. I want to plant. I want to bake (and I never want to bake).
But baking is nice because it essentially equates to sharing. I have always leaned towards cooking and vegetables. But as the weather gets warmer and fruits become more abundant, my taste start to shift and I find myself using my mixer and vanilla extract more than ever. These blueberry crumb bars are perfect for spring, or anytime really.
They’re light and refreshing and the fruit can easily be substituted for berries of any kind.
