Did you have a bad day? (I have!) Did you wake up to find the water wasn’t working so your hair was a mess, you had to microwave ice cubes to brush your teeth and you couldn’t make coffee? Do you feel like an idiot because you are, apparently, the only grown up that doesn’t know where your water main is?
If so, I recommend this Apple and Brie Panini. It is gooey and tasty enough to cheer you up. It will make you feel like a grown-up again. You might even forget for a few minutes that you spent the entire day with your hair looking like…. that.
The sweet crisp apples, melty cheese, tart jam, and crunchy walnuts make this one of my favorite sandwiches. You could sub pear for the apple, pecans or sliced almonds for the walnuts and any cheese or jam you like best. This is your bad day sandwich.
The apple and brie panini (with walnuts and Jam) is just plain delicious. I call it – my feel-good food. Every time I make this sandwich for me and the family I cannot help and think about autumn.

1/2 large apple (I like honeycrisp for this)
1 Tbs raspberry jam
2 Tbs walnuts
2 slices of country or sourdough bread
